chocolate banana muffins and why sharing is caring

I have a little extra time to cook, bake, and experiment in the kitchen right now since I can’t train because of my neck…. This creates a bit of a conundrum, though, because eating baked goods all day when I’m not working out at all… Well, it goes without saying that that just won’t do.

It’s a good thing I have friends, and that my friends train A LOT. In fact, many of them are training for The CrossFit Games Northern California Regionals right now, which means the more healthy food they take in, the better. Sharing is caring, and I care about my friends. Therefore, I will share (and not eat my weight in baked goods).

Jason’s favorite food of all time is banana bread, and after he gave me a hard time all day at the event on Saturday for not bringing him any treats, I decided to get busy and bake up some pre-regionals goodies.

I figured I would make banana bread, firstly, because it’s Jason’s favorite, but secondly, because I don’t like bananas and wouldn’t be tempted to eat his treats. Well, the later didn’t pan out… These were GOOD, which means I ate 3 before packing them up to go.

It still counts as sharing right?

Anyways, I decided on THIS recipe from the latest ingenious cookbook by Juli Bauer (Paleomg) and George Bryant (Civilized Caveman) called The Paleo Kitchen.

I made some tweaks and decided to make muffins for easy sharing (plus, it’s less obvious if I eat some that way).

So, here’s what I did….

Paleo Kitchen Chocolate Swirl Banana Bread (Muffins)

  • Servings: 12
  • Difficulty: easy
  • Print

  • Follow the directions for the batter, but swap organic sunbutter for the almond butter (more peanut buttery taste)
  • I actually bypassed the swirl and just added about a cup of enjoy life chocolate chips
  • I decided to make muffins instead. If you do this, only bake for 35 minutes, but start checking on them after 30.
  • This made 12 muffins, and a small loaf, which Rusty sliced up and pan fried in butter with some fried eggs. I only wish we took a picture before he demolished it. I had one this morning with my coffee, and it was delightful.

Enjoy!! Oh hey… I also chopped my hair off. Thoughts? (Not usually a selfie taker, but hey… short hair, don’t care)
