Ever at a loss for what to do with those overripe bananas?
While we almost always make sourdough banana bread, I decided to change things up this week thanks to a serious brownie craving. These banana-sweetened, moist-as-all-get-out gooey brownies were a real hit, and I’ll be making them on repeat over here for a sweet treat with less of a sugar hit (and trust me; no one will even know it).

banana brownies
WHAT YOU NEED:
- ¾ cup butter, melted
- 1 cup coconut sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 very ripe bananas, mashed
- ¼ cup cocoa powder
- ¾ cup flour (I used einkorn)
- ¼ teaspoon sea salt
- ½ teaspoon baking powder
- ½ chocolate chips

WHAT YOU DO:
Preheat the oven to 350F and butter up an 8×8″ square pan.
Whisk together the butter, sugar, eggs, vanilla, and mashed banana in a large bowl.
In a separate bowl, mix the cocoa powder, flour, salt, and baking powder. Then, add this flour mixture to the wet ingredients, gently folding them together until combined. Follow that with the chocolate chips and fold the batter one more time.
Pour the batter into your pan and bake for 30-40 minutes or until a toothpick comes out with no wet batter (a little bit is ok if you like yours gooey like me).
Let them cool for 10-15 minutes and then flip them to a wire rack to cool completely. Slice into desired-sized squares and ENJOY!
