blackberry (cottage) cheesecake ice cream

Looking to boost your protein intake? Craving ice cream (me too, always)?

Those two things can (and should) coexist. This protein-packed, cheesecakey, deliciously creamy ice cream knocked my socks (or barefoot sandals) off, and I am hooked. the girls agree, and this will now be a summer-long staple. I am extra happy about that because it’s protein-packed thanks to Paleovalley’s vanilla whey protein powder and a whole carton of cottage cheese, filled with antioxidants from locally picked berries, and a great sweet treat that also nourishes my girls and me after a fun day of exploring, play, and life.

blackberry (cottage) cheesecake ice cream

WHAT YOU NEED:

  • 1+ cup fresh blackberries (or whatever berry you love!)
  • 1 16-ounce container of cottage cheese (we love Good Cultures)
  • 1/2 cup whole milk (or substitute)
  • 3+ tablespoons honey (to sweet preference)
  • 2 scoops Paleovalley vanilla whey (or protein powder of choice)
  • 1/2 cup favorite graham crackers (bonus points if you use your own sourdough ones)

*I get my graham crackers (when I don’t make my own) and raw honey from Thrive Market at a great price. 

WHAT YOU DO:

Add berries and milk to a blender or food processor and blend until smooth.

Optional step (but I prefer it), strain out the seeds with cheesecloth or a fine strainer.

Add the cottage cheese, protein powder, and honey to the berry mixture and continue to pulse/blend until smooth.

If you have an ice cream maker (we love ours), add this creamy mixture in and set to churn for 10-12 minutes. before this next step.

Move the ice cream mixture to a glass tupperware and then crumble your graham crackers and gently fold in.

Place the ice cream in the freezer and let it freeze for 2+ hours or until it hits creamy perfection (unless you used an ice cream maker, then dive right in).

Note: to keep it creamy without the ice cream maker, pop it out after the first hour or so for a quick folding/mixing to keep it churned.

Serve it up (or eat straight from the container), and ENJOY!
