Curry-baked cauliflower and chicken

Lately, I’ve been craving curry, but I don’t have the time to make sauces from scratch in this very full season. Thankfully, there are some incredible easy-button, super high quality pre-made curry sauces that we love! (thank you, Thrive Market). 
One of our favorites? Simple and delicious curry-baked cauliflower and chicken bowls loaded with deep nutrition, balanced macronutrients (hello protein), and so much fun flavor too. And turns out our 3-year-old loves curry chicken legs too. Indie will smash 2 or more drumsticks in a sitting, and mama is happy.

Delicious dinners don’t have to take too much time, and the nightly ritual of sitting down to a meal together is so grounding and sacred to our family.

I’ve made this at least once a week for the past month, and the crew is here for it. It’s simple, nourishing, and DELICIOUS. curry-baked cauliflower and chicken

WHAT YOU NEED:

WHAT YOU DO:

Preheat your oven to 400F. Either earlier in the day to save time (like I do) or just before baking, put the cauliflower and onion in a big bowl. Pour over ¼ cup of the curry, and toss until well coated. Add the chicken and pour on more curry, then evenly coat the chicken and set aside.
When you’re ready to bake, spread everything evenly out on one sheet pan and bake for 40+ minutes, until the cauliflower and onions begin to caramelize in all the juices and your chicken is cooked through.
Meanwhile, cook rice or lentils per cooking instructions.
Scoop rice into a bowl, top with the cauliflower + onion, add a leg or two, and scoop on some Greek yogurt for extra protein-packed creamy goodness. ENJOY!
