And that’s why this recipe is so perfect.

Protein (plus creaminess and so much great flavor) from my favorite cottage cheese, nourishing fat from the best olive oil I’ve tried, and a simple meal made in moments that the whole family loves.

We tossed up some Jovial brown rice fusilli and chicken, topped with local microgreens and cherry tomatoes, sprinkled with parm, and paired with fresh-baked focaccia for the dipping. And OH MY.

cottage cheese protein pesto

  • Servings: 3+
  • Difficulty: easy
  • Print

WHAT YOU NEED:

  • 1 cup of your favorite cottage cheese (we love Good Culture)
  • 1/2 cup packed basil leaves
  • 2 cloves of fresh garlic
  • a pinch or more of sea salt (I like more)
  • 2 tablespoons olive oil
  • 1/3 cup parmesan cheese

WHAT YOU DO:

Throw it all together in a food processor and let her rip OR if you’re like me and don’t have one, add all ingredients to a bowl, and use your immersion blender to blend it well.

Toss with your favorite pasta, top your sourdough pizza, spread on a sandwich, and/or scoop with that slice of focaccia, and, as always, ENJOY!
