Roasted Red Pepper and Tomato Soup 

Lately, I’ve been loving simple, soul-warming soups loaded with deep nutrition, balanced macronutrients (hello protein), and so much flavor.

When a tomato soup craving hit last week (along with a need for an easy weeknight meal), I got creative with what we had on hand and made one of my favorite soups to date. We pair this with fresh-baked (still-warm) sourdough focaccia and a rotisserie chicken from our favorite local farm, and simple prep made for a special family dinner.

I’ve made this soup 3 times in the past week, and it was a real crowd pleaser when my sister visited (plus, it gave me more time to spend with the ones I love instead of in the kitchen). It’s simple, nourishing, and DELICIOUS. We even warmed the leftovers and packed them up for a soul-warming bonfireside lunch at the lake.

roasted red pepper and tomato soup

  • Servings: 6+

WHAT YOU NEED:

for the ranch:

  • 4 pints of any good tomatoes, 2 cans diced tomatoes (or a combination of the two options – I used 2 pints of local cherry tomatoes + 1 can diced tomatoes)
  • 1 yellow onion, chopped
  • 1 large red bell pepper, chopped
  • 3 carrots, chopped
  • 4+ garlic gloves, smashed and peeled
  • Sea salt, to taste
  • Plenty of Clean Monday Meals Italian Seasoning
  • Fresh thyme
  • Olive oil drizzle
  • 3 cups bone broth
  • 16-oz container of cottage cheese

topppings:

  • Flake salt
  • Chili oil
  • Parmesan
  • Fresh herbs

WHAT YOU DO:

  • Preheat the oven to 400F and spread out the tomatoes, bell pepper, onion, carrots, and garlic on a baking sheet.
  • Drizzle with olive oil and toss to coat; then, sprinkle with sea salt and top with a few sprigs of fresh thyme.
  • Bake for 40+ minutes until everything is soft and aromatic.
  • Add to a blender or food processor with bone broth and cottage cheese (you might need to do this in batches if yours is smaller).
  • Warm on the stove top until it’s nice and hot for serving. Add more salt to taste, if needed.
  • Serve, top, dip, enjoy!
