If you know me, you know I love turning my sourdough discard into delicious sourdough delights, and friends, this might be my best yet.
This recipe is inspired by crumble fixings my dear friend, Moya, made with miss Indie last week when they spent the afternoon together. She and Indie peeled pounds of apples* (see below for more on that), and Indie came home with a tupperware of apple filling and a mason jar of crumble topping for us to bake whenever we wanted.
And oh, we wanted to. The next day, I turned on the oven and set to compiling the components and baking up a delicious afternoon treat. As I turned on the oven, I remembered that Willow (my starter) needed a discard and feed. I dislike ditching discard, so on a whim, I added some starter and oats to the crumble they’d made…
And WHAT A WIN. The crumble topping is filled with so much flavor and the perfect buttery melt-in-your-mouth texture that pairs so well with the flavor-packed apple filling.
We enjoyed it this past weekend with scoops of homemade vanilla ice cream during a family movie night. And every one of us went back for more. Actually, until this dessert, Evie thought she didn’t like any cooked apple desserts. The discard crumble can convert even the most critical apple dessert eaters.
And now, I plan to make this one for every holiday gathering all season long. It’s so simple and you can prep the components a day ahead to make things even easier, especially if your hosting this holiday season. This might be new favorite dessert, but you’ll have to bake it and see for yourself.
*Note: I’ve decided that owning an apple peeler/slicer, while not necessary, might just be the biggest game-changer for apple recipe baking/making with kids. Hours of entertainment and bonding thanks to a fun crank that makes for safer slicing and plenty of novelty (holding attention for lots longer).
WHAT YOU NEED: Apple filling: Crumble topping: Equipment: WHAT YOU DO: Preheat your oven to 350F. Peel and thinly slice the apples, add to a bowl, and toss in the spices, lemon juice, and maple syrup. Taste to make sure you’ve got the balance just right and dump the crumble filling into a glass baking dish or tupperware. While the oven preheats, pop your apple filling in and let it bake for about 20. Alternatively, put all the apple filling ingredients in a pot and set to low heat, mixing occasionally until the juices start to release. Once they do, remove some of the juices to a small bowl and mix in your extra starter until dissolved; then return to the pot and continue to cook down until desired thickness. Add flour, oats, butter, sugar, starter, and spices to a food processor or blender and pulse until crumbly and combined. Press crumble topping evenly across the top of your apple filling and bake for another 20-30 minutes, until the top is golden brown and the apple filling is bubbling. ENJOY!!
