10365540_10203792883605600_3003216401455425145_oYesterday, I had the pleasure of seeing months of planning come together with the kick off of the Second Annual NorCal CrossFit Bro-Down! This is a yearly event I put on for all four NorCal locations that brings our community together for some friendly competition, bro bonding, and lots of fun. I left the gym with a full heart after seeing everyone come together (competitors, volunteers, and spectators) because it was a true testament to the community that NorCal has become. This is so much more than a CrossFit gym; for so many it has become not only the best part of their day, but a place to go to see their closest friends, their support system, and their newfound family.

10505005_10203792884245616_4403852858121587518_oThe winners take the golden sledgehammer home to their gym. The point of all this is just a simple reminder of how important it is to belong to something like this. For me, the CrossFit community has been the most accepting, bettering, and incredibly fun group I’ve ever come into contact with. Having a support system, like-minded people to turn to in time of celebration and in hardship, and friends to enjoy life with are essentials to happiness, and everyone deserves a community to call her own. I’m so fortunate to belong to both the NorCal CrossFit and CrossFit HQ communities, and that’s something I hope to never take for granted. So whatever your community might be, fitness oriented or otherwise, cherish it because we are all made better by the positive people we surround ourselves with!  

Now, onto a delicious and easy dinner I made last week. I threw all this in the crock pot before we left for the event, and came home after a long day to a nourishing meal. Win! You can also prepare in an Instant Pot and have a meal in less than an hour. It is quick, affordable, and clean way to keep you fueled up with all kinds of nutrients. Most of this meal can be thrown together with spices you probably have on hand and meat and veggies from your local farmer (we get ours at Farmer’s Market every Sunday).

So here you go…

Easy, Clean Crock Pot Chuck Roast

  • Servings: 4-5
  • Difficulty: easy

WHAT YOU NEED10449947_1504108983152449_5269428299356175453_n

  • 2 pound grass-fed chuck roast (the bigger the roast, the more spices you’ll need, so add accordingly)
  • 3-4 organic carrots (you can add other veggies in too – onion, leeks, sweet potato, etc.)
  • salt and pepper to taste
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1-2 tsp garlic salt or minced garlic
  • 1 ½ cups water or (better yet) bone broth
  • 3 TB grass fed ghee (tallow or coconut oil work too)

WHAT TO DO:

  • rub your spices all over the chuck roast and leave it in the fridge for 30 min to 3 hours
  • pan sear meat in the ghee/butter on all sides in a skillet on medium-high heat to lock in juices
  • place roast along with sliced veggies and water or stock in a crock pot
  • cook for 5-7 hours
  • I basted mine 4 times throughout the cooking process to ensure maximum juiciness
  • let sit 10 minutes before cutting
  • slice against the grain
  • ENJOY!! duh
