After a recent farmers market haul, I was seeking ways to enjoy the big bundle of kale I got from one of our favorite local farms along with a few delicious sweet white onions.
And thus, this recipe is born. The keys here are sautéing the onions low and slow for a delicious caramelization, steaming the kale (right on top of the onions) to make them soft and delicious, and topping it all off with magic crack sauce an OG recipe favorite.
I’ve made this at least 5 times in the past two weeks. It’s simple, nourishing, and DELICIOUS. I love it in a big bowl with sprouted brown rice (from Thrive Market) and pulled chicken, pork, or beef from US Wellness Meats.

kale + caramelized onions and crack sauce
WHAT YOU NEED:
- 1+ teaspoon olive oil, avocado oil, or butter
- 1 sweet onion, sliced thin (shallots and red onion work well too)
- sea salt to taste
- 1 bunch of kale, chopped
- 2 tablespoons water
- Plenty of crack sauce (tahini, coconut aminos, and sea salt)
WHAT YOU DO:
Preheat a large skillet over low heat.
Drizzle in the oil, then add the onion and a sprinkle of sea salt. Sauté for 10-15 minutes, stirring occasionally (this slow and low cooking sweetens the onions to caramelized perfection).
Add the kale on top, plus 1-2 tablespoons water.
Increase the heat to medium and cover with a lid to steam the kale for 5-10 minutes until it is wilted and tender.
Remove the lid and toss it all together to incorporate the kale and onions.
Add more sea salt to taste and saute another minute or so until any leftover moisture is gone.
Plate it up with your favorite pairings, drizzle with crack sauce, and ENJOY!
