I’ve made this ranch bowl at least 5 times in the past two weeks. It’s simple, nourishing, and DELICIOUS. WHAT YOU NEED:
for the ranch:
- 1/4 cup plan greek yogurt (or sub cottage cheese*)
- splash of lemon juice
- 2 teaspoons (or more to taste) Clean Monday Meals Ranch Seasoning
- a pinch of sea salt (optional)
- 1 tablespoon filtered water (or enough for desired consistency)
for the bowl:
- a few sprays of avocado oil
- plenty of Clean Monday Meals Ranch Seasoning (to taste)
- 1 cup brussels sprouts
- 1 cup sweet potato (cubed) or delicata squash (seeds removed and cut into half moons 🌙)
- 4+ oz butterflied chicken breast
- 1/2 cup chickpeas or premade crispy roasted chickpeas
- 1/4 cup pink pickled onions
- 1 oz feta
- Your ranch dressing (see above)
- Extra pinch of salt to taste
WHAT YOU DO:
Preheat the oven to 400 F, add the chicken breasts, brussels, squash, and chickpeas to a baking sheet, spray with avocado oil, and sprinkle generously with Ranch Seasoning.
Bake for 20+ minutes or until to desired crispiness (chicken should have an internal temp of 160 F).
While that cooks, mix the dressing ingredients together, slowly adding splashes of water until you get your desired consistency. If you use yogurt, simply mix with a fork or spoon; if you choose cottage cheese, use an immersion blender or food processor and blend until creamy.
Add the baked bits as the base of your bowl, top with sliced chicken, pink onions, feta, and all that delicious dressing on top.
