Ricotta + bone broth pasta

This recipe was a happy accident, and when I say happy, I mean whole-family-approved happy.

What started as an attempt to make a twist on lasagna soup ended as a creamy, protein-rich pasta dish that covers all the bases. It’s delicious. It’s super simple to make, and it’s nourishing and loaded with protein thanks to US Wellness Meats’ protein-packed pastured ground turkey.

We used Chikapea fusilli from Thrive Market made from organic chickpeas (for even more protein fun). Give this a try the next time you’re in a weeknight dinner rut. I am certain your family will thank you!

WHAT YOU NEED:

  • a bit of avocado oil or butter
  • 1/2 yellow onion, diced
  • 1 pound of ground turkey (any ground meat works well here)
  • 1 teaspoon garlic powder or 1 clove fresh minced garlic
  • 1+ teaspoons sea salt (to taste)
  • 1 teaspoon dried herbs of your choice; I love sage, thyme, and oregano
  • 1 jar of your favorite marinara (we love Thrive Market’s Sicilian Gravy)
  • 1-2 cups bone broth (depending on desired consistency)
  • 12 ounces of your favorite dry pasta
  • 1/2 cup ricotta

WHAT YOU DO:

Set a pot over medium heat. Once it’s hot, add cooking fat and onion, and cook, stirring, till translucent. Then, add the garlic and stir till just fragrant. Toss in the meat, sea salt, and herbs and cook, breaking up the meat and stirring often, until cooked through and all combined.

Add the marinara and stir well, bringing to a simmer and then add the broth. This is where I’ll set to simmer until we’re about ready to eat, making this an awesome make-ahead weeknight meal.

Whenever you’re ready to eat, bring the mixture to a simmer and add the dry pasta, cooking per directions. Then stir in the ricotta for the extra hit of creaminess.

Now, I serve with lots of grated parmesan, and it’s just the best. Bonus points if you’ve got a side of sourdough focaccia for sauce dipping. ENJOY!
