If you’ve been here long, you know we have a Sunday family sourdough pizza ritual that we love. Every Sunday, after a day of outdoor adventure (usually with a sourdough sandwich picnic, of course), we come home to family time and a sourdough pizza dinner. I’ve grown to cherish this ritual so very much.
I decided to change things up a couple weeks ago, and the result was one of my favorite pizza combinations of all time. It’s such a simple ingredient list but the flavor is out of this world.
Brussel sprouts on a pizza? Might sound odd, but it’s SO delicious. Trust me. Crispy brussel sprout leaves, tender sweet yellow onion, salty prosciutto and parm, and creamy goat cheese. What’s not to love?

brussel sprouts and goat cheese pizza
WHAT YOU NEED:
- pizza dough of your choice; we LOVE using the sourdough crust from my Sourdough Sisterhood Recipe Book.
- 1 tablespoon butter
- 1 cup brussel sprout leaves
- 1/2 yellow onion
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1-2 teaspoons garlic powder
- teaspoon dried sage
- 1 teaspoon dried thyme
- 1/2 cup grated parm
- 2oz prosciutto
- 1/4 cup goat cheese
WHAT YOU DO:
Preheat your oven to 510F (if you have a pizza stone, put the stone in the oven to get really hot).
Set a pan to medium-high heat and add butter, once hot, cook your onions until translucent and then add brussel leaves, stirring gently until just wilted.
Now, roll out your pizza dough (on a pizza peel if you have one, or whatever pan you’ll bake on if not; baking on a cast iron pan works well too), and drizzle with olive oil and spread evenly; then, sprinkle with remaining sea salt and garlic powder, plus, sage, and thyme.
Sprinkle parm all over and then evenly spread the onion and brussels, followed by prosciutto, and finally goat cheese on top.
Move to the oven and bake for 6-8 minutes until crust is golden and toppings are perfection. ENJOY!
