My daily lunchtime ritual grounds me, nourishes me, and helps me slow down even in the midst of the craziest days. Some mamas are fine with a hodgepodge lunch situation (zero judgment), but for me, there’s something powerful in preparing and enjoying a pretty and delicious lunch. - Batch cooked sprouted brown rice (I add about a cup)
- Batch cooked shredded chicken (I add about 5-6 oz)
- Roasted chickpeas and/or a scoop of hummus
- grated carrot
- Pink pickled onions
- Microgreens
- Thai peanut sauce (I like the Naked and Saucy brand from Thrive Market)
- Sprinkle of peanuts
