Buddha Bowl

Lately, I’ve been loving Buddha bowls loaded with deep nutrition, balanced macronutrients (hello protein), and so much flavor too. Oh, and they’re easy to throw together with prep-ahead ingredients for the week.

My daily lunchtime ritual grounds me, nourishes me, and helps me slow down even in the midst of the craziest days. Some mamas are fine with a hodgepodge lunch situation (zero judgment), but for me, there’s something powerful in preparing and enjoying a pretty and delicious lunch. And it doesn’t have to take too much time from our very full days either.

I’ve made this at least 5 times in the past two weeks. It’s simple, nourishing, and DELICIOUS. I love this one with sprouted brown rice (from Thrive Market) and pulled chicken, pork, or beef from US Wellness Meats or Wild Pastures (save 20% for life and get free shipping here)

I hope you enjoy this one too!
