Kids (especially those who are underserved and under-appreciated) doing CrossFit at school… you already know how happy this makes me, but let me tell you a little bit more.

I have been incredibly fortunate in my life; I get to do a job I absolutely love for a company (CrossFit, Inc.) that loves and appreciates its employees, I work with amazing people every day who are passionate about what they do and excited to be alive, and I get to have my belief in education renewed every time I meet an educator excited to change their students’ lives through education and through CrossFit.

One of the most amazing things about the CrossFit community is the way that everyone jumps at the chance to support each other.

I got to meet Alice Lai at the 2013 CrossFit Games, and her passion for teaching and for changing the current state of education inspired me. She will be opening her own school in the Fall of 2014, and after meeting the community and seeing the results during her first CrossFit experience (the day she spent at the Games), she has decided that this is something that the kids need.

We worked together to find stellar CrossFit Kids programs in East LA, where she will be opening the doors of her school to underserved kids, and thanks to the 3 affiliate owners who jumped at the chance to donate time to help her out, those kids will get to experience CrossFit at school every day.

And now for some nutrition talk….

I thought I would share a staple meal in the Bruner household with you… burger bowls!!

When we are short on time but excited to sit down together for a good meal, this is our go-to. Who doesn’t love burgers, right? And for the most part, the stuff inside the bun is pretty dang delicious. The only problem is that stinking bun, so why not just do away with the bun, add WAY more of the good stuff, and eat it all in a bowl.

We can get almost all of the organic ingredients at Costco, so this is an affordable meal as well.

Here is how we make it happen…

Bruner Burger Bowl

  • Servings: 2
  • Difficulty: easy

WHAT YOU NEED:

  • mixed greens or baby kale (organic girl baby kale is our favorite)
  • 2 organic big carrots
  • 3 roasted organic beets (you can get these ones in bulk at Costco)
  • organic raw pumpkin seeds
  • avocado
  • grass fed organic ground beef
  • raw organic cheddar cheese from grass-fed cows (yep we have dairy, but only high quality stuff like this)*
  • organic olive oil
  • organic balsamic vinegar
  • some coconut oil
  • stove top griddle or pan + small pan for your seeds

*Note: remember with everything test it out and see how it makes you feel. Rusty and I feel great eating raw milk cheese, so we incorporate it into our diet! I can’t do regular ice cream or milk very well, but cheese is just fine. Test these things out, and see what works for you.

WHAT YOU DO:

  • turn on the burners under your griddle
  • put a plan on the stove top on medium and put about a 1/4 cup pumpkin seeds
  • fill a big salad bowl with the greens
  • grate the carrot with a cheese grater and cut up the beats into little bits, then add to the greens
  • cut up an avocado and throw it in
  • put the toasted pumpkin seeds on top
  • add olive oil and vinegar and toss it all together
  • measure out the proper amount of ground beef (add 1/2 oz for the melt off) – we do2 x 6.5 oz for a 4 block each
  • put a little coconut oil on your griddle so the burgers don’t stick and put the patties on
  • after you flip the first time (once they start to bleed through the top a bit) put the cheese on and cover with a plate or bowl to make it melty
  • now get a big plate (we use our soup bowls) and divvy up the salad evenly into each
  • Put the burger on top
  • ENJOY!!
