simple soul warming chicken soup

This is our go-to soup all winter season long. It’s nourishing, soul-warming, and so delicious. And it’s also about as easy as it gets. One pot. All the flavor. Whole family approved.

So here you go, a delicious soup that will satisfy, fuel your adventure, and leave you feeling content and fulfilled too, knowing you saved time (and money) and are nourishing yourself and the ones you love.

Simple chicken soup

  • Servings: 8+

WHAT YOU NEED:

  • 1 tablespoon avocado oil or butter
  • 1 yellow onion, diced
  • sea salt to taste
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 pound chicken breasts
  • 1+ tablespoons fresh or 1+ teaspoons each of your favorite herbs: thyme, sage, rosemary
  • 1/2 cup rice
  • 3 cups of bone broth
  • optional toppings: cilantro, avocado, parm

WHAT YOU DO:

  • In a large soup pot, sauté onions in oil or butter until translucent; then add carrots and celery and continue to sauté, stirring until just softening.
  • Add chicken breasts and sear each side for a minute or 2; then add garlic and herbs and stir.
  • Now, add the rice (dry) stirring until everything is fragrant and smelling delicious.
  • Add the broth and bring to boil; stir, cover with the pot lid, and set to low.
  • Set to simmer and add potatoes, carrots, cauliflower, bay leaf, and thyme
  • Let simmer for 30+ minutes, and then check chicken; it should be pull apart tender.
  • Pull each breast out and pull apart with a fork or dice with a knife and then return to the pot.
  • Serve warm (sometimes I’ll make this midday and let it sit on low until dinner).
  • ENJOY, ideally along with sourdough for dipping.
