easy curry bowls

This has quickly become Rusty’s favorite weeknight meal, and I’m right on board. With a little prep ahead and the ease of using a quality curry sauce from a jar, it also makes getting dinner on the table so easy, especially on the crazier days when time seems to fly. It’s also absolutely delicious, beautifully balanced, soul-warming, and a real crowd-pleaser. Oh, it’s great as leftovers too!

WHAT YOU NEED:

  • 2 tablespoons avocado oil
  • 1 pound protein of your choice: chicken breast, beef ribeye, roast, sirloin steak, or kabab meat (we choose from our Wild Pastures* freezer stock), cubed
  • 2 teaspoons sea salt
  • 1/2 cup bone broth
  • 1 onion, diced
  • 1/2 cauliflower, chopped
  • 1 cup carrots, sliced
  • 1 cup potatoes, cubed (optional)
  • 1/2 cup sugar snap peas or green beans, chopped
  • 1 jar of your favorite curry sauce (we LOVE Yai’s Thai)
  • 1 cup rice
  • 2 cups additional bone broth or filtered water for the rice

WHAT YOU DO:

  1. Set a large pot to medium heat. Drizzle avocado oil, and add onions, stirring until translucent. Add the meat, sprinkle with sea salt, and sear on all sides. Add 1/2 cup broth, set to low heat, and let simmer for 60-90 minutes (depending on meat choice) until meat is tender and falling apart.
  2. Add remaining veggies, stir, and let it cook for another 15-20 minutes until just tender.
  3. Meanwhile, rinse rice, bring bone broth or water to boil in a medium pot, add the rice to the pot, cover, set to simmer, and cook for 20 minutes.
  4. Scoop rice into bowls and top with curry goodness. ENJOY!!
