It’s oatmeal bake time! Many of you know that we’re finding a new rhythm over here as of late. We have a newborn, my husband got a new full-time job, and Evie girl is off to forest school bright and early.
All that said, I am enjoying finding ways to simplify our mornings without sacrificing nourishment, family time, or mental health.
Enter: the oatmeal bake.
The whole family approves, and because I can make it ahead of time, breakfast just got so much easier, allowing for more time to play, read, and snuggle, hopefully, avoiding the morning stress that comes with very little time to get out the door.
Whether your mornings are full or not, I hope this recipe nourishes and pleases you and yours!
It’s versatile (choose your mix ins and flavors), easy, protein packed, nourishing and so delicious!

easy and delicious oatmeal bake
WHAT YOU NEED:
- 1 large, super ripe banana
- 1 cup milk of your choice (we use local raw milk)
- 2 tablespoons maple syrup (or more if you like it sweeter)
- 3 tablespoons butter or coconut oil, melted
- 2 teaspoons vanilla
- 2 cups oats (we love sprouted)
- 1 tablespoon ground flaxseed
- 2 scoops protein of your choice (I’ve used Paleovalley Bone Broth Protein and Four Sigmatic Cacao Protein; save 15% on either with code: RADICALROOTS)
- 1 tablespoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
Mix-in options we love:
- 1/4 cup chopped walnuts + 1/2 cup frozen blackberries
- Four Sigmatic Cacao Protein + 1/4 cup dark chocolate chips
- 1/4 cup hemp hearts + 1/2 cup chopped dates
- 1/3 cup grated carrot + sprinkle of ground ginger + 1/4 cup raisins + 1/4 cup walnuts (think carrot cake)
- whatever sounds good to you!
WHAT YOU DO:
Preheat oven to 375F, and spread a little butter or coconut oil in a 9-inch baking dish.
In a large bowl, combine mashed banana, milk, syrup, butter, and vanilla.
In a separate bowl, add oats, protein, ground flax, cinnamon, baking powder, and sea salt, and mix till combined.
Add dry ingredients to wet, and stir until well combined; then fold in your mix-ins.
Bake for 30 minutes, until toothpick comes out clean.
Top with nut butter, yogurt, or cream, and ENJOY (ideally warm, but it’s great cold too)

Update: made this yesterday and it came out so good. We had it for breakfast and kids loved it – easy to heat up. I made mine with frozen blueberries and walnuts, added a few scoops of black sesame seeds for extra nutrition. I think I will keep this recipe as something easy I can take for new moms postpartum (& to help lactation!).
