Looking to boost your protein intake? Eyeing those overripe bananas on your counter? Love the brightness of ripe raspberries?
Me too. Spring is here (and so are all the spring activities and long days in the sun), and these protein-packed, super delicious raspberry oat bars are the perfect simple breakfast, pre-gymnastics fuel, and snack on the way to wherever our adventures take us (hello lake life).
Complete with Paleovalley vanilla whey protein, bananas for sweetness, oats for energy, and fresh raspberries, it’s sure to be a win with everyone in your household too.
Hitting protein goals, building muscle, enjoying sustained energy, and enjoying every bite CAN coexist, and these bars are proof of that.
I hope you enjoy this one too!

WHAT YOU NEED:
- 2 cups fresh raspberries

- 1/4 cup nut butter (go peanut butter for pb&j vibes)*
- 2 cup oats*
- ½ cup vanilla whey protein powder
- 1 teaspoon cinnamon
- Pinch of sea salt
- Optional add-ins: chocolate chips, nuts, dried fruit
*I get my organic sprouted oats, nuts, chocolate chips, and dried fruit from Thrive Market at a great price.
WHAT YOU DO:
Preheat the oven to 350 degrees F and line an 8×8 baking dish with parchment.
Smash together the banana and 1 cup raspberries in a bowl. Then, add the the nut butter, maple syrup, salt and cinnamon and mix to combine.
Dump in the oats and protein powder and stir until well incorporated.
Fold in the remaining 1 cup raspberries.
Bake for 35 to 40 minutes, or until golden brown.
Allow to cool completely before cutting into 10+ squares (depending on how big you want them).
Serve, and ENJOY! I love mine for breakfast with a scoop of whipped cottage cheese for even more protein.
Let me know what you think. Happy nourishing!
