I’ve been building “balanced bowls” for a while now, and every time I share on social media, I get lots of feedback and questions. Sweet potatoes are almost always the base of these bowls, and since getting an air fryer as a gift for Indie’s birth (thank you, Dana!) the bowls have gotten that much easier. A few simple steps, less than 20 minutes of hands-off cook time, and you’ve got sweet potato bits that are crispy on the outside and soft on the inside, the perfect base for any balanced bowl of yum!
I’ll add these to greens at the bottom of a bowl and then top with pink pickled onions, kraut, whatever protein I have on hand, avocado, and goat cheese. Then, most of the time, I top with sourdough croutons for extra flavor and crunch. These fixings change with the seasons and based on whatever I have on hand, but they’re always nourishing, delicious, and balanced!
So go ahead, make yourself some versatile, super simple sweet potatoes. Enjoy!
air fryer sweet potato bits
WHAT YOU NEED:
- 1 medium sweet potato
- a drizzle of avocado oil
- 1+ teaspoons sea salt (depending on taste)
WHAT YOU DO:
Cube the sweet potatoes and let them sit in a bowl of filtered water for 15+ minutes.
Now, throw them in the air fryer, drizzle with oil, sprinkle with sea salt, then, give the air fryer base a good shake to toss them.
Set the base in the air fryer, and set for 8 minutes at 400F.
Once that time is up, toss them again and put back in for another 8 minutes or until desired crispiness.
