honey lemon tahini dressing

There’s something about tahini that I just love. Who’s with me? Tahini is a paste of crushed sesame seeds that is widely used in Middle Eastern cooking (and in our kitchen). It’s versatile, flavor-packed, and makes such a great base for all kinds of dressings, sauces, and even baked goods.

My most recent endeavors into tahini use resulted in a delicious salad dressing that we’ve already put to use multiple times in the past week.

First, atop a simple salad for a dinner with friends that included mixed greens, goat cheese, and toasted walnuts. And more recently, drizzled over a salad of local greens, warm roasted brussel sprouts, toasted pecans, quinoa, and more goat cheese. SO good. The possibilities are deliciously endless (and suitable for every season).

WHAT YOU NEED:

  • 1/2 cup tahini
  • 1/2 cup lemon juice (2-3 lemons worth)
  • 1 tablespoon olive oil
  • 1/2 tablespoon honey
  • 1 garlic clove, grated (or 1/2 teaspoon garlic powder)
  • 1/2 teaspoon sea salt
  • ~1 tablespoon filtered water

WHAT YOU DO:

  1. Add all the ingredients (aside from the water) to a jar and mix vigorously with a fork till it’s creamy and delicious.
  2. Add water in tiny splashes, mixing as you do, until you have the desired salad drizzle consistency.
  3. Drizzle on your favorite salad (also good on a sandwich (trust me), roasted brussels sprouts, you name it)! ENJOY!!
