simple juicy round roast

We’ve had a round roast from our friends at Wild PasturesĀ sitting in the freezer for a few weeks now. To be honest, I had no idea what to do with it. But after asking some friends, doing a little light reading, and turning on the creative juices, I got over my hesitation, and put that roast to use. And oh. my. goodness.

Moments of actual effort. Set it and forget it. And boom, the most delicious, juicy, nourishing roast that the whole family enjoyed. It’s great for any season. Since it’s spring now, we paired with air fryer green beans and crispy potatoes, and it made for the perfect, easy weeknight meal.

You’ll need to start it around lunch time, but it takes just moments. I simply thew it in the oven while making lunch, and continued through my day. And then, we had leftovers for sourdough sandwiches and salad toppers for the next couple days. It’s great cold, sliced thin the next day or two.

simple juicy round roast

  • Servings: 6+

WHAT YOU NEED:

  • 2-4 pound bottom round roast (we love the one from Wild Pastures)
  • 1 tablespoon avocado or olive oil
  • 2+ teaspoons sea salt (I used about a tablespoon, but I love my food sea salty)
  • 2 teaspoons granulated garlic
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper

WHAT YOU DO:

Pat your roast dry and set it on a cutting board to get to room temp for 10-20 minutes.

Meanwhile, preheat your oven to 170F and get your ingredients out.

Cover the roast on all sides with your oil and then sprinkle seasonings on all side, patting in with your hand.

Move to a roasting pan, and put it in your oven to roast for 2 hours per pound.

Once it’s done (thermometer reads 125-130F), remove the pan, tent with foil, and let it sit to rest for at least 10 minutes and up to an hour.

Now, boost that oven up to 510F for a final roast to sear. Remove foil, return pan to oven, and let it get crispy for about 10 minutes.

Remove from the oven, let rest for 15-20 minutes, slice thin, and ENJOY every bite!
