easy any night taco bowls

Anyone else feeling the need to spice up dinners lately? Sheltering at home means a lot of meals in and a lot family feeding that needs to happen. We’ve been having fun getting creative, turning the same staples into unique meals throughout the week. Take for instance, grass-fed ground beef; shift up the spices, the way you cook it, and the accompaniments, and all of a sudden, it feels like a different staple altogether.

It’s in this season of extra every-night cooking, that I threw together this taco bowl on a whim, and it’s quickly become a family favorite. Taco bowls are not just for Tuesdays anymore, because what day is it anyways? Oh, and just a note: this is especially delicious topped with homemade pink pickled onions and sprouted black beans! Enjoy!

It’s also great with a side of sourdough tortillas (recipe in my Sourdough Sisterhood book) to stuff everything into!

WHAT YOU NEED:

  • 1/2 cup wild or sprouted rice
  • 1 cup bone broth + sea salt to taste
  • 1/2 pound grass fed ground beef
  • 1/2 tsp +/- each: cumin, paprika, chili powder, turmeric
  • 1-2 tsp sea salt
  • some big handfuls of organic mixed greens

favorite toppings:

  • 1 avocado, sliced 0r your favorite guac
  • pink pickled onions
  • sour cream
  • grated raw jack cheese
  • salsa
  • sprouted black beans or black bean hummus
  • we’ve also topped with a fried egg for a protein boost and it’s delicious (especially seasoned with the same seasonings as the beef)!

WHAT YOU DO:

  1. Add rice and broth + salt to a pot, bring to boil, reduce to a simmer, and cover with lid to cook for 20-30 minutes, until liquid is all absorbed.
  2. Add beef to pan on medium high heat, sprinkle with spices and cook it through, breaking apart, and stirring frequently.
  3. Add greens to plate, top with cooked rice, beef, and all the good toppings.
  4. Season with extra sea salt to taste and ENJOY!
