how I sprout beans

I’ve been craving beans lately. Not sure why, but I do love listening to my body, so beans have been added into our rotation. We’re especially loving them in taco bowls with our crispy pulled pork.

All that said, from my work in the nutrition world I do know that legumes are more easily digested, and the micronutrients more bioavailable, when soaked and sprouted. Up until now, we’ve been soaking our beans for at least 12 hours before cooking, but I decided to take it up a notch by sprouting some black beans!

I’ve sprouted chickpeas for years now, but wasn’t entirely sure how black beans would turn out since it was my first go, but I was very pleasantly surprised. In just a few days, I had sprouted black beans, and I am excited to put them to use this week. Turns out, we can sprout all kinds of beans. More nutrition, better digestibility, win-win!

I use sprouted beans on their own, as salad toppers, in taco bowls, on sourdough sandwiches, and as hummus (both chickpea and black bean). It’s a must try, friends!

how I sprout black beans

  • Servings: 4-6
  • Difficulty: easy

WHAT YOU NEED:

  • 2 cups of dried beans
  • filtered water
  • a colander
  • a tea towel

WHAT YOU DO:

Rinse your beans well and make sure to remove any little pieces of rock or debris. Then, put them in your jar and fill to the top with filtered water to soak 8+ hours (we do all the way overnight).

Once they’ve soaked, strain the beans in a colander, and rinse well, then set the colander over a bowl (for any dripping), cover with tea towel.

3-4 times a day, rinse the beans, and then cover again, and continue to let sit on the counter.

After the 3rd day, you’ll start to see tiny sprouts appear on some of your beans. For some beans (like black beans),  single bean won’t sprout. You’ll know they’re done when you see that at least half have sprouted little tails.

Time to enjoy! Be sure they’re nice and dry before storing in a covered container or use right away however you’d like!

    Hi! I’m trying to do this en masse and soaked 4 cups of black beans last night. Is there a danger of them molding because there’s so much in there? I realize after the fact that I might have soaked too many.

      I’d recommend sprouting them in a colander covered with a towel instead! Just set it in a bowl. Enjoy!
